if u are tied to a supplier eg, they supply your dispensers you are generally looking for 50-60%gross, if its your own pub etc, buy from wholesalers everything other than the kegs, ibuy the minimum to keep the brewers happy and get everything else separately from various suppliers. you can make 150% minimum on bottled beers, alco-pops ,various soft drinks, get a soft drink dispenser using concentrated coke, lemonade etc your profit margin will shoot up. try to make 100% minimum across the board then you are going in the right direction. if you sell food get rid of snacks eg, crisps peanuts, have reasonable priced specials available all day people will soon order when they are hungry.
I’ve always run on approx 72% GP on liquor. You should be able to make more than 100% on minerals, esp postmix (coke, lemonade). Draught is harder due to wastage as is wine.
